Chicken Soup Recipe

One small whole organic chicken
Chopped carrots
Chopped celery
Chopped onion
Chopped garlic
Chopped parsley
Chopped green onions
6 bay leaves
Olive oil
Salt and pepper

In a large pot heat up olive oil, add garlic and onion, sweat a bit, then add carrots and celery and sautéed till browned a bit, add whole chicken and filtered water or stock, add bay leaves and bring to boil, lower the heat and simmer, season with salt and pepper.

Simmer till chicken is done, remove the chicken, let it cool and pull the skin and remove the bones. Pull the meat off and put it back into the pot, chop parsley and green onion add it to the pot and serve.

Sometimes I cook angel hair pasta and put it in the bowl and pour the chicken soup over it, call it the “Czech Ramen” JJJ.
