Italian Turkey Wrap Recipe

Fast, tasty and super satisfying wrap/sandwich that is perfect for parties and picnics!

One large flour tortilla, plain, spinach or sun dried tomato
3 oz of turkey breast, chopped
One “hand” of fresh baby spinach
6 large leaves of fresh basil, chopped
2 oz of shredded mozzarella
2 oz of fire roasted red bell peppers ( the jar variety will do)
8 cherry tomatoes or small San Marzano ones -I love these!! Cut them in half!
1 table spoon of extra virgin olive oil
1/2 table spoon of balsamic vinegar
1 teaspoon of Dijon mustard
Pinch of sugar

Makes one wrap

Lay out the tortilla and put all the “dry” ingredients (except the sugar) in a large mixing bowl. Prepare dressing by combing all the wet ingredients in a small bowl and whisk together along with the sugar. When all is mixed, add the finished vinaigrette to the large mixing bowl with the dry ingredients by using tongs – mix really well! When everything is combined and mixed, lay it out on the tortilla and roll it up for wrap/ burrito.

PS: I like to grill the tortilla to get some nice marks and cut it into 4 pieces for easier consumption!
