A great way to prepare steak and an excellent accompanying sauce is to use a heavy skillet.
Season the steak with salt and cracked pepper on both sides, heat up the olive oil, and add the steaks.
Cook to your liking, take out and cover.
Add chopped shallots, sauté and scrape the pan to release the bits. Pour good red wine and simmer till almost gone. Add chicken stock and a dash of balsamic vinegar and reduce till almost gone.
Set aside, add cold butter and stir till all are incorporated. Season if needed. Put steaks on plates and drizzle sauce over it.
