Try this recipe but remember you have no proportions!
Heat up olive oil in a deep heavy bottom pot and add big slabs of bacon, sauté till some fat is released, add onions and garlic.
Stir often and sauté till golden!
Drain white beans that were soaked overnight, add to the pot and mix it all together!
Add stock, bring to boil, add Hungarian paprika, tomato paste, cumin, and bay leaves.
Mix, simmer and season with salt!
This will take 1-2 hours depending on the size of the beans. Make sure you have stock simmering nearby just in case you need to add some more liquid!
The finished dish should be very flavorful, thick (not soupy) and beans should be crunchy on the outside and soft on the inside! Serve it as side dish for Pork, Lamb dishes, or even NY steak.
Sprinkle a little freshly chopped parsley on top of the beans for some color and more flavor!
