FRUIT OF THE MONTH OF MAY, PEACHES
I truly love peaches, I love to eat them raw and love to cook with them. Peach Gazpacho is awesome and Peaches with Mint and Burrata is an awesome appetizer that will rock your world. Warm peaches on top of chicken with Moroccan spices is a winner as well.
Bellow is another recipe in which fresh peaches play main role.
Burrata with crispy basil, heirloom baby tomatoes and warm purée of peaches
Slice peaches and sauté them in unsalted butter till slightly burnt and soft. Place peaches in a blender with little bit of orange juice, honey and basil. Blend till nice and smooth. Ladle the peach purée in the middle of the plate. Scoop burrata and position it in the middle of the plate, place tomatoes cut in half around the cheese. Drizzle great quality extra virgin olive oil all over and drops of aged balsamic vinegar. Fry one large basil leaf for decoration and place on top.
I also like to add little bit of crunch to this appetizer so I sprinkle little bit of crushed hazelnuts all over.
